Fresh or frozen chopped yellow onion, chopped bell pepper, broccoli or cauliflower florets

Chopped kale/spinach

Instructions
Preheat oven to 350*. Make the cheese sauce and add to a large mixing bowl with the potatoes and a few of the add ins. Stir well to combine, Add the mixture to a dish and bake uncovered for 45 minutes or until potatoes and veggies ara tender. Once done, remove fro the oven an allow to cool for10 minutes.
