Ingredients
2 tablespoons olive oil
8 ounces sweet Italian sausage, casings removed
2 cups diced eggplant, salted and let to stand 30 minutes
2 cups diced zucchini
2 cups diced green bell pepper
1 cup chopped onion
5 cloves of garlic, minced
3 fresh tomatoes, juiced and chopped
2 tablespoons chopped fresh parsley
2 tablespoons Italian seasoning
fresh basil to garnish and shredded Parmesan

Instructions
In a Dutch oven, heat oil and saute sausage until brown. Remove sausage. In the same pan, saute the chopped vegetables for 15-20 minutes until softened, stir in the spices, cover and place in a 350 degree oven for an additional 20 minutes.
