Lemon-Mint Fizz by

* 1/2 cup sugar,
* 3/4 cup fresh lemon juice
* 3/4 cup chopped fresh mint leaves
* seltzer water
* lemon zest
* whole mint leaves


Combine sugar, lemon juice and chopped fresh mint leaves in saucepan. Stir over medium heat until sugar dissolves. Simmer 2 minutes and remove syrup from heat. Let cool. Strain out solids.

Fill 4 glasses with ice cubes. Pour 3 tablespoons syrup and then 3/4 cup seltzer water in each glass. Top with lemon zest and garnish with mint leaves.
