Chicken with Sauce Soubise by

Ingredients

1 yellow onion
4 boneless skinless chicken breasts
4 oz white wine
8 oz light cream

Instructions

Preheat oven to 450F.

Mince onion.

Heat 2 tsp olive oil to Med/High. Sear chicken breasts until browned (2-3 min/side). Bake to 165F (4-6 min).

Return pan to medium heat. Add 2 tsp olive oil and onion. Stir until translucent (2-3 min). Add white wine and cook 2 min. Add cream and reduce until thick. Add 1/2 tsp salt and juices from chicken.
