Ingredients
- 1 tsp paprika
- 1 tsp leaves dried thyme
- 1 tbsp extra virgin olive oil
- 1 tsp garlic, diced
- 4 small mushrooms, chopped roughly
- 1 small onion
- 2 small zucchini
- 1 cup chopped red bell pepper, diced
Instructions
1. In a large skillet, heat oil over medium-high heat.
2. Add onion, thyme, and paprika, reduce heat to medium-low, and cook, stirring occasionally, 7 minutes, or until onion is softened.
3. Stir in salt, bell pepper, mushrooms, zucchini, and garlic.
4. Cover and cook, stirring occasionally, 4 minutes longer.
