Chicken Salad Sandwich by

Ingredients

2 cooked skinless, boneless chicken breasts - cut into cubes
2 celery stalks, chopped
1/4 red onion, chopped
1/3 cup cranberries
1/3 cup non-fat yogurt
1/3 cup low-fat mayo
1 package slivered almonds
1 granny smith apple, chopped
Garlic powder, curry powder, black pepper and salt to taste

Whole-wheat pita pockets, halved
Romaine lettuce leaves

Instructions

In a large bowl, mix all of the salad ingredients, serve atop romaine lettuce. Chicken salad can be eaten as is or eat as a pita sandwich. Recipe serves about 5-6.
