Mexican Rice by

Ingredients

1 Can Black Beans Drained and rinsed (or 1 1/2 Cups)
1 Can of Corn Drained and rinsed (or 1 1/2 Cups)
2 cups of cooked Brown Rice
1 can of Fire Roasted Tomatoes
1 tsp of Cumin or to taste
1/2 tsp garlic powder or to taste
hot sauce to taste

Instructions

Mix all the ingredients in a pot, heat through and serve.
Or put on an oil free tortilla with lettuce, onion, tomato, cilantro. or any of your other favorite vegan, oil free taco toppings.
