Beanless Chili by


olive oil
2 lbs ground beef
1 green bell pepper, diced
3 cloves garlic, minced
16 fl oz tomato sauce
7 fl oz tomato paste
12 fl oz diced tomatoes w/ green chiles, with juice
1 qt beef broth
mostly chili powder (3 tbsp?)
some oregano (1 tsp?)
some garlic powder (1 tsp?)
salt (4 pinches?)
black pepper (2 pinches?)
MSG (1 pinch?)
cocoa powder
3 oz strong coffee


1. Heat olive oil over medium high heat in a large pan.
2. Sautee green bell pappers
3. Once they begin to brown, transfer to dutch oven.
4. Sautee garlic in pan. Once they become a pale golden color, transfer to dutch oven.
5. Add meat to pan and press to ensure good contact.
6. Once one side of the meat has browned, break up the meat and brown all over.
7. Transfer meat to dutch oven - try to bring as little fat from the pan to the dutch oven as possible.
8. Add tomato sauce, tomato paste, diced tomatos, beef broth, and seasonings to the dutch oven, and set over medium heat on small burner.
9. Mix, simmer, and adjust seasonings to taste.
10. Serve with cheddar cheese, avocado, tortilla chips, sour cream to your liking.
