Roasted Beets by

Ingredients
Beets, unpeeled, greens removed
Olive Oil
Salt
Pepper
Herbs de Provence
Instructions
1. Scrub beets clean with water
2. Roll out a long sheet of aluminum foil (2.5 feet?). Fold over hamburger style once.
3. Place beets on aluminum foil, and fold foil over beets. Crimp sides 2+ times to form a 1/2 inch or so border around to seal in steam.
4. Preheat oven to 375 F.
5. Place beets in oven directly on grate and bake for 90-120 minutes.
6. When beets show little-no resistance from a knife or a fork, remove from oven and allow to cool. Once cool enough to handle, peel by gently scrubbing beets under cool running water.
7. Cut beets as desired and serve
