Mojito by


60 g (2 fl oz) white rum
20 g (2/3 fl oz) lime juice
15 g (1/2 fl oz) simple syrup (or 10 g white granulated sugar)
A small handful of fresh mint leaves


1. Slap mint leaves against wrist a few times, or clap in palms of hands once to release some of the mint oils. Add to empty highball glass.
2. Fill glass with ice.
3. Add rum, lime juice, and simple syrup (or sugar) to cocktail shaker with ice.
4. Shake vigorously for 30 seconds.
5. Strain over glass with mint and ice.
6. Stir drink to mix mint leaves into drink.
