Banana Pancakes by


Yields 1 serving:

1 ripe banana
2 whole eggs


1. Blend all ingredients in a blender to make batter

2. Coat pan with a thin layer of coconut oil or butter on low/medium heat

3. Pour in some batter and wait 20-30 seconds before flipping

4. Top w/ berries or some syrup & serve

*Feel free to add a pinch of cinnamon or vanilla to the batter
