Hot Artichoke and Red Pepper Dip by

You can also add 10 oz. frozen spinach (thawed and well drained) and 1 package (4 oz) of crumbled feta cheese to the artichoke mix.


1 C mayonnaise
3 T Dijon mustard
1 can (14 oz) artichoke hearts, drained and chopped
1 jar (7 oz) roasted red peppers, drained and chopped
1/4 C sliced scallions
1 clove garlic, minced
1/3 C mozzarella cheese


Preheat the oven to 400.
Stir the mayo and mustard until well blended. Add artichoke hearts, red pepper, green onion, and garlic. Spoon into 1 Q baking dish or a 9 inch pie plate. Sprinkle with cheese.
Bake in preheted oven 6-8 minutes (until cheese melts).
Serve with tortilla chips or party rye bread.
