Ingredients
Ingredients for 2 three inch single pork pies (this seems variable, the pork for me goes into four pies, but the pastry volume is too low)
The Pastry
260g / 9oz Plain or All purpose flour
60g / 2oz Butter
70g / 2½oz Lard
1tsp Level Salt
110g / 4oz Water
The Pork
400g / 14oz Minced or Ground Pork, with a 20% fat content
150g / 5oz Lean pork loin diced small
Seasoning (Pepper primary)
1 tsp Sage
1/2 tsp Thyme
1/4 tsp Ground white pepper
1/4 tsp Cayenne pepper
1/2 tsp Nutmeg + Mace (split the amount between them to suit)
1/2 tsp Black peppercorn (ground)
Some additional black peppercorn cracked roughly in a mortar
Seasoning (BBC)
1/2 tsp All spice
1/2 tsp Nutmeg
Pepper to suit
Other
Egg wash
