Babydoll's Git You Some Cheesy Potato soup by

I created this recipe using basic potato soup as a background and added the other ingredients in an effort to find a good filling soup that my kids and husband would enjoy. I'm thinking of adding chunks of carrots next time!

Ingredients

1/4 C Butter
1 1/2 C diced onion
1 1/2 C diced celery
2 C water
2 T chicken bullion
another 8 C water
10 peeled and diced potatoes
1 C Sour cream (I used lo fat)
2 C milk (I used 2%)
10-15 slices american cheese

bacon bits and chopped green onions to garnish


Instructions

1. In soup pot, melt butter and sautee onions/celery until soft.
2. Add 2 C water and use hand blender to puree onions and celery.
3. Add bullion, 8 C water and potatoes. Bring to boil and boil softly for 15 minutes or until potatoes are soft.
4. Mash some of the potatoes with potato masher or hand blender, leaving some larger chunks.
5. Add cheese slices one by one and stir to melt.
6. In a separate container, whisk together milk and sour cream, add to pot.
7. Bring to soft boil and add pepper.
8. If prefer thicker, add potato flakes and stir, remember it will get even thicker as it cools.

Serve with bacon bits and green onion.
