Grandma Glory's Oatmeal Bread by

Ingredients

1 Cup Boiling Water
1/3 Cup Molasses
1 Cup Regular Quaker Oats
1 Beaten Egg
5 1/2 Cups Sifted Unbleached All Purpose Flour
1/3 Cup Melted Butter
2 Pkgs. Active Dry Yeast
1 Tbsp. Salt
2 tsp, Sugar

Instructions

Dissolve yeast and sugar in a small bowl in lukewarm water (110-115 degrees). Let stand for 10 minutes then stir well. Combine oats, molasses, boiling water and salt in a large mixing bowl. Cool to lukewarm and then add yeast and well beaten egg. Fold in 5-5 1/2 cups flour. Put slightly sticky dough in a well greased mixing bowl turning to grease all sides. Refrigerate for two hours and up to 4. Turn out chilled dough on floured board and shape into two loaves. Place in well buttered 9 x 12 inch loaf pans and let rise in warm draft free location for about 2 hours. Bake in 350 degree oven for about one hour or less. Remove from pans and cool on rack. It should be nicely browned and sound hollow when rapped on bottom. Eat hot out of oven or as toast. There is nothing like it.
