My hubby loves this very much and saying I can make money with my adobo recipe. My mother-in-law too who doesn't like chicken had two pieces of this chicken. Try this recipe and tell me how you think of it. Enjoy!

Ingredients

1 lb chicken thighs (washed and skin removed)
2 tbsp light soy sauce
2 tsp salt (no need if using dark soy sauce as it would be too salty)
2 tsp pepper
1 tsp ginger powder or fresh ginger if preferred
3 tbsp garlic or less if preferred (chopped)
1 lemon /or 1tbsp vinegar if preferred
1 bay leaf
1/2 cup brown sugar
1/2 cup water
1 tsp cloves
1 tsp turmeric powder
1 whole tomato (chopped)
2 tbsp butter(optional)
1 tbsp olive oil/ vegetable oil

Instructions

Marinade:
Add soysauce, salt, pepper, lemon juice, bayleaf, ginger and sugar in a ziplock bag or any container. Mix well before adding in the chicken.
Marinate for atleast an hour. The longer the better. Keep refrigerated.

cooking:

In an iron skillet or any skillet add olive oil and butter.
Saute tomato until almost wilted. Fry chicken in the sauteed tomato. (Dont throw marinade, we'll be using that later)
Turn after 10mins. And wait for another 10mins before pouring the marinade in.
Add 1/2 cup water, cloves and turmeric. Cover and Let boil for 20 mins.-30 mins.
Remove cover and cook more until the sauce turns to oil. Turn chicken until brown.
You can also use paprika or hot pepper flakes but its optional.

Serve with plain rice.
