Ingredients

1 cup chopped dates
1 1/4 cup boiling water
1 tsp baking soda
1 Tbsp oil (you can use butter if you're not dairy free)
3/4 cup brown sugar
1 egg
2 cups plain flour
1 tsp baking powder
Optional 1/4 tsp vanilla essence

Instructions

Put dates, water, soda & oil in a mixing bowl, stir.
Leave it for 10mins.
Mix in sugar, egg, vanilla, mix well.
Add flour & baking powder, stirring just to combine.
Pour mixture into a square slice/loaf tin (mine's 19x21cm).
Bake at 180 for 40mins or til it's brown on top (don't undercook it or it's gooey in middle, but don't overcook).
Cut into squares.
Cut square in half & spread with margarine to eat
