2002 Cookie Exchange - Peanut Butter Balls by

Ingredients

1 lb. margarine
2 c. peanut butter
2 lb. confectioners sugar
18 oz. semi-sweet choc chips
1/4 lb. paraffin
3 tsp. vanilla

Instructions

Cream margarine and peanut butter with mixer. Add sugar and mix with hands until it is firm enough to form into small balls the size of marbles. Add vanilla. Mix thoroughly using hands. Melt chocolate and paraffin in small double boiler. After it has melted, keep on low flame. Dip balls in chocolate using a toothpick. Place on waxed paper to cool. As you are going along, cover the toothpick holes with chocolate (dip toothpick in chocolate and drop on hole). You must work quickly.
Yields 125 pieces.

Cut ingredients in half if only 60-65 balls are desired. However, do not cut the choc. chips or paraffin in half.
