Spinach Balls by

Ingredients

4 large eggs, beaten
2-10 oz. packages of frozen spinach, thawed and drained
1 c. minced onion
3/4 c. Parmesan cheese
3/4 c. butter, melted
1/2 tsp. salt
1/2 tsp. thyme
1/4 tsp. pepper
1/4 tsp. nutmeg
2 1/2 cups herb-seasoned stuffing mix

Instructions

1. Mix together eggs, spinach, onion, Parmesean cheese, butter, salt, thyme, pepper, and nutmeg.

2. Stir in stuffing mix and let stand for 20 minutes.

3. Shape into 1-inch balls and place on lightly greased coookie sheet.

4. Bake at 350 degrees for 20 minutes or until lightly browned.
