Skillet Brussels Sprouts with Pancetta and Cranberries by

Ingredients

1/2 cup pancetta cubes
1 Tbsp butter
1 red onion, thinly sliced
1 1/2 lbs fresh Brussels sprouts, halved or quartered
1 cup fresh cranberries

Instructions

1. Saute pancetta in large skillet over medium high heat until crisp and golden. Remove and place on a plate lined with paper towels. Drain fat from pancetta out of pan, if desired.

2. In same pan, melt butter over medium to high heat and add onion, cranberries and Brussels Sprouts. Allow to cook until sprouts are tender and caramelized and berries begin to burst, stirring occasionally, 15 - 20 minutes.

3. Season with salt (in moderation) and pepper and toss with pancetta in pan. Remove from heat and drizzle with Simply Enjoy Balsamic Glaze
