Mushroom Casserole by


3 lbs Fresh Mushrooms
cup Margarine
1 Large Onion, chopped
8 oz Brick Cheddar, shredded
16 oz. pkg,Chicken Flavored Stuffing Mix
1 pt half-and-half


1. If mushrooms are large, cut in half. Place margarine, chopped onion, and mushrooms in 5 quart Dutch oven. Cover and cook over low heat for about 30 minutes or until mushrooms are tender and have made their own juice.

2. In large casserole dish, place 1/3 mushroom and onions, 1/3 cheese, and 1/2 stuffing mix. Repeat layers., topping with remaining mushrooms and cheese. When spooning mushrooms into casserole dish, use some juice, but not all of it.

3. Pour half and half over casserole.

4. Bake at 350 for 30 minutes until set and cheese has melted. Serves 10 to 12
