Lemon Zest Chicken Stir Fry by
TIP: To keep from over cooking the chicken, under cook the chicken and then finish cooking it when you add the veggies at the end.
2 chicken breasts cut into chunks
1 zucchini chopped
1 red pepper chopped
1 green pepper chopped
1 small onion chopped
chicken breasts cut into chunks
red pepper chopped
green pepper chopped
small onion chopped
In a small container add the chicken chunks, squeezed lemon juices, dash of salt, and dash of pepper.
Close and shake.
Let sit covered for about 10 minutes.
Fry chicken chunks with lemon and butter in a small frying pan on medium heat until cooked through. Approx. 15 min.
Take off the burner and put to the side.
Stir Fry Instructions:
Cook rice according to your packages instructions. When cooked, take off burner and put to the side with the chicken.
In a large frying pan or wok put down a tablespoon butter, salt, pepper and set to medium heat.
Add the rest of the veggies and season to your taste.
Add the chicken, rice, and soy sauce.
Cook until hot. Serve right away.
