Wilted Cucumber Salad by

Ingredients

2/3 cup cider vinegar
1/3 cup water
4 Tablespoons Honey
1 tsp sea salt
4 medium cucumbers - sliced thin (you can seed them if there are a lot of seeds), peel is optional
1/2 cup thinly sliced red onion
2 Tablespoons minced fresh dill
ground black pepper to taste

Instructions

1. Slice the cucumbers and onion very thin. You can remove the seeds if the cucumbers are not of the seedless variety. You can also peel if you want. I leave the peel on if they are organic or unwaxed. Combine in a bowl.

2. Heat vinegar, water, salt and honey to just boiling.

3. Pour hot liquid over cucumber onion mixture. Allow to cool to room temperature.

4. Add dill and black pepper to taste.

5. Store cucumbers in the fridge. with all liquid in tightly closed container (glass jars work nicely). They will keep up to 2 weeks in the fridge.
