Almond Cranberry Cookies by

Ingredients

2 cup raw almonds, process into chunks
3 cups medjool dates, pitted
1 cup whole fresh cranberries
1 cup unsweetened coconut, shredded
2 tablespoons vanilla extract
1 tablespoon almond extract (optional)

Instructions

Process the almonds first in the food processor to get them into reasonable chunks, but not too fine. Then add the dates and cranberries and chop. Then add everything else and process till it is all combined nicely. I would suggest letting the mixture sit in the fridge for about 15 minutes before rolling out onto parchment paper and cutting with cookie cutters.

I also found some vegan, grain sweetened chocolate chips at whole foods, which I melted and spread on the top of the cookie. Then before the chocolate hardened I sprinkled unsweetened coconut on top.
