Carmelized Onion and Gorgonzola Grilled Pizza by

Ingredients

6 tbsp EVOO
1 1/4 lbs. (2 large) onions, halved and thinly sliced
14 to 16 oz pizza dough
1/4 lb. Gorgonzola or Goat's Milk Brie
1/2 cup walnuts, toasted and coarsely chopped
1/2 cup chopped parsely

Instructions

Heat 1/4 cup of oil over medium-low heat. Add onions, sprinkle with salt and pepper, cover. Stir ocassionally, cooking for 15 to 20 minutes. Set aside.

Roll out dough. Brush generously with oil. Be sure not to roll it out too thin of the crust will burn.

Bring dough and all ingredients to the grill. Cook dough about 1 1/2 minutes per side. Remove it from the grill and layer onions, cheese, walnuts, and parsley. Return to grill and cook until cheese is just melted.
