Red Roast Trio by

3/4 lbs red new potatoes, scrubbed and cut in half
1/2 med red onion, thickly sliced
1 red pepper, cut into 1-inch square pieces
2 tbs olive oil
salt and freshly ground pepper


1. Preheat over to 350
2. Toss all ingredients together and place in a roasting pan and cook until golden brown, about 1 hour. Toss the vegetables after a 1/2 hour. This allows them to caramelize in the pan.
