Candied Yams with Apples by

Ingredients

3 lbs yams, peeled and cut into 1 inch pieces
1 lbs Granny Smith Apples, peeled and cut into 1/2 inch pieces
2 med. onions, cut into 1-inch wedges
4 tbs unsalted butter
1/4 c honey
1 tsp salt
1/4 tsp nutmeg
1/4 tsp cayenne pepper

Instructions

1. Roast the yams: Preheat oven to 350. Toss all ingredients in a large bowl to combine. Transfer to a baking dish and bake, stirring occasionally, until yams are tender, about 1 hour. Increase oven to 500 and bake until liquid evaporates and yams are browned (10-15 min.) Serve immediately.
