Strawberry Muffins #307452 by

40 min/10 min prep Good for breakfast, snacks, or you can even frost them with your favorite white frosting for dessert! These are supper easy to make and essentially pantry ingredients. (If, like me, you keep some frozen sliced strawberries in the freezer for quick desserts!)

Ingredients

1 (16 oz) package of frozen sweetened strawberries, thawed and undrained
3/4 c mayonnaise
1/3 c sugar
1/3 c brown sugar
1 tsp vanilla
2 c all-purpose flour
3/4 tsp ground cinnamon
1 tsp baking soda
1/2 tsp baking powder

Instructions

1. Preheat oven to 350.
2. Puree strawberries in blender or processor.
3. Mix mayo,sugars, and vanilla into strawberries.
4. Mix together flour, cinnamon, and baking soda and sift into wet ingredients.
5. Mix until just combined.
6. Pour batter into greased muffin tin.
7. Bake until tester inserted in center comes out clean, about 30 minutes.
