Cauli Fried Rice by

Just typed this off the top of my head. Hopefully i did not miss any important steps.

Ingredients

Half a cauliflower
1 heaped tsp of crushed Garlic
Onion - chopped finely
Knob of butter
2 eggs
2tbsp Coconut Aminos
Parmesan Cheese
Vegetables cut julienne style for faster cooking - carrots, zucchini,
Broccoli cut small
Other vegetables you might like to add - pumpkin cut into cubes and half cooked, beans, peas, corn kernels,

Instructions

TO MAKE YOUR RICE
Cut your cauliflower into florets, I use around half a good sized cauliflower and does 2 adults a decent size for dinner, mini me's dinner and then lunch the next day.
Rinse under water and put in a food processor, whizz in the processor until your cauliflower resembles rice.

FRIED RICE BIT...
Cut a knob of butter and put it in a pan to melt.
Once it is nearly melted add the crushed garlic and onion, sauté for a few minutes until the onion is clear.

Add the cauli rice to the pan.
Move the cauli rice around the frying pan so it is coated in butter and garlic.
Add in the prepared vegetables and mix through the rice.

Leave this to cook for 5 minutes or so, stirring every now and again to ensure even cooking.
Once the vegetables are nearly cooked sprinkle parmesan cheese on top and add in 2 tbsp of Coconut Aminos and two whisked eggs. Stir the eggs, sauce and cheese through.

Leave the rice a minute or two to cook a bit more.

Give your Fried Rice another stir and serve.
