Fish Croquettes by

Ingredients

4 tilapia fillets
4 green onions
4 oz flour
8 oz 2% milk
2 c panko breadcrumbs
4 oz sour cream
2 tsp smoked paprika

Instructions

Trim and thinly slice green onions, keeping white and green portions separate.

Coarsely chop tilapia fillets. Cook in 2 tsp olive oil on Med/High heat with salt and pepper (5-8 min). Transfer to a large mixing bowl.

On Med/High heat, cook white portions of green onions in 2 tbs olive oil for 90 s. Stir in half of the flour (reserve other half for croquettes) and milk. Stir until very thick paste forms (1-2 min). (Wipe and reserve pan.) Combine with tilapia and season with 1 tsp salt, breaking fish into flakes. Stir in remaining flour when cool.

Return roux pan to medium heat and add canola oil. Form fish mixture into 1" thick by 2" diameter patties. Cover entirely with panko. Oil should sizzle gently when a small amount of batter is added; if it browns immediately, turn it down. Cook croquettes in pan until golden brown (2-4 min/side). Transfer to paper-towel lined plate and season with a pinch of salt and pepper.

Pimenton cream sauce:
Combine sour cream and smoked paprika in a mixing bowl.
