Ingredients
1/2   tbsp  Extra Virgin Olive Oil

1 1/2 oz    Green Onions
1     lbs   Ground Beef, 75% Lean
1/2   tbsp  Salt
1/2   tbsp  Black Pepper
== Seasoning Mix ==
2     cup   Green Bell Pepper
1     tbsp  Parsley
1/2   tbsp  Oregano
1/2   tbsp  Basil

3           Eggs
1     cup   4 Cheese Mexican Blend Shredded Cheese
1/2 tbsp

Instructions
1.  Preheat oven to 350°. 
2.  In a large skillet over medium heat, heat oil. 
3.  Add onion and cook until slightly softened, 2 minutes.
4.  Add ground beef and season with salt and pepper. Cook, breaking up meat with a wooden spoon, until no longer pink, 6 minutes. 
5.  Sprinkle in taco seasoning and pepper. Cook, stirring, until spices are lightly toasted, 1 minute. 
6.  Drain and let cool slightly.  
7.  In a large mixing bowl, whisk eggs, then add in meat mixture. 
8.  Spread mixture into an even layer in the bottom of a 2-quart baking dish. 
9.  Sprinkle with cheese. Bake until set, about 25 minutes.
