Lentil Quiche by

1 garlic clove, minced
1 medium onion, finely chopped
3/4 cup red lentils, rinsed in cold water and drained
2 cups milk
pinch of dried thyme
2 eggs
1 cup cheese, grated
1 pie shell (or you can make your own, see "Simple Pastry Dough" recipe in the other section )


1. In a large saucepan, fry garlic and onion until soft.
2. Add the lentils and stir. Add the milk and thyme and bring to a boil.
3. Reduce hear, cover and simmer gently for 35 to 40 minutes, stirring every 5 minutes to prevent burning on the bottom. Remove from the heat and set aside.
4, Preheat the oven to 375 F.
5. In a bowl, beat the eggs and stir in 3/4 cup cheese. Add egg mixture to lentils and stir to mix.
6. Pour mixture in the pie crust in pie pan. Sprinkle top with remaining cheese.
7. Bake for 45 minutes
