Potatoes Au Gratin by


-8 medium sized red potatoes
-2 tablespoons butter
-2 tablespoons all purpose flour
-1 1/2 cups milk/cream combo
-grated cheddar and/or 3 cheddar blend cheese
-1 tablespoon dijon mustard
-pinch dry thyme
-1 cup chopped green onions


-boil skin-on potatoes and allow to cool, then slice in 1/4 inch thick slices and place in greased baking dish.
-in saucepan, melt butter and then stir in flour and cook for 2 minutes over medium heat.
-slowly add milk/cream mixture stirring constantly over medium heat until thick sauce mixture.
-add S+P to taste, and dijon and thyme.
-place potatoes in one layer on bottom of baking dish and top with sauce mixture, more S+P, sprinkle lots of shredded cheeses on top and add green onions.
-place in oven at 375 for 30 minutes..until golden brown and bubbling ! Allow to set in hot (turned off oven) for another 10mins to set. Serve with your fave meat and veggies !
