Cabbage Roll Casserole by


--1 large cabbage, finely chopped.
--1 pkg lean ground beef.
--1 pkg lean ground pork.
--1can condensed tomatoe soup
--1 large can diced tomatoes.
--1 jar of sweet basil tomato pasta sauce.
--1 small can of tomato paste.
--2 large diced onions.
--3 bay leaves.
--2 tbsp butter.
--4 carrots chopped.
--2 cloves crushed garlic.
--1 large green pepper diced.
--1 large red pepper diced.
--1/4 cup white wine vinegar.
--1 tblspn dry oregano.
--1 tblspn italian dry spice.
--2 cups of sharp cheddar and mozzerella cheese blend.
--6 servings of Basmati rice (cooked as the package recipe states).


Boil chopped cabbage until very soft. In large fry pan orlarge cooking pot, brown the beef and pork in olive oil with garlic, diced onions, S+P, oregano, Italian spices,and carrots. Once all browned, add diced peppers, fry until softened. Add the vinegar, diced tomatoes,tomato soup, bay leaves, butter, tomato sauce and tomato paste. Simmer for 45mins until all the flavours are melded together. Pour the basmati rice into the meat and tomato mixture and stir until thoroughly mixed. Pour into Large roasting pan and top with the shredded cheese. Bake in oven until the cheese is melted and serve with some crusty bread!!
