Banana Chocolate Chip Muffins by

Ingredients

1 3/4 c all purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 large overripe bananas, mashed (about 1 cup)
1 c packed light brown sugar
2 eggs
1/2 c canola oil
1/2 c buttermilk
1 1/2 tsp vanilla
1/2 c semi-sweet chocolate chips

Instructions

Preheat oven to 375F, then line a muffin pan with paper liners.

Whisk flour, baking powder, baking soda, and salt in a bowl.

Whisk bananas, sugar, eggs, oil, buttermilk, and vanilla in a bowl until smooth. Stir in flour mixture until just combined. Stir in chocolate chips. Divide batter among prepared cups.

Bake until browned and tester inserted into centre muffin comes out clean, about 18 minutes. Cool in pan on a rack, 10 minutes. Remove from pan and let cool completely.
