Baked Broccoli Cheddar Tots by
6 cups broccoli florets
2 c shredded cheddar cheese
3/4 c panko
1/4 tsp salt
1/2 tsp pepper
s broccoli florets
c shredded cheddar cheese
Preheat oven to 400F, then line a baking sheet with parchment paper.
Bring a large pot of water to a boil. Add broccoli and cook for 1 minute. remove to a large bowl of ice water and submerge broccoli to stop cooking. Drain and pat dry with a kitchen towel.
Pulse broccoli in a food processor until finely chopped, then transfer to a large bowl. Add egg, cheddar cheese, panko, salt and pepper and stir to combine.
Scoop out heaping tablespoons of broccoli mixture and shape into a tot. Repeat with remaining mixture and place tots 1 inch apart on prepared sheet.
Bake until golden brown, about 28 to 30 minutes.
