Oatmeal Carrot Muffins by

Note: I added about 2T vanilla yogurt after I mixed all ingredients together - it seemed very thick. Muffins turned out delicious & moist!
Ingredients
3/4 c. brown sugar
1/2 c. oil
1 egg
1 tsp. vanilla
1/2 c. grated carrot
1 c. rolled oats
1/2 c. whole wheat flour
1/2 c. all-purpose flour
1 tsp. baking powder
3/4 tsp. soda
1/2 tsp. salt
1 1/4 tsp. cinnamon
1/4 tsp. nutmeg
Chopped nuts (optional)

Instructions
Combine oil, brown sugar, egg, vanilla and carrots. Mix well. Combine dry ingredients and stir into first mixture. Add nuts if desired. Spoon into 12 muffin papers. Bake at 400 degrees for 15-18 minutes.
