Pumpkin Roll by


3 eggs
1 cup sugar
1 tsp ginger
1 tsp lemon juice
2 tsp cinnamon
1 tsp baking powder
1/2 tsp salt
1/2 tsp nutmeg
3/4 cup flour
2/3 cup pumpkin
1 cup chopped nuts

1 cup powdered sugar
6 oz cream cheese
4 tbsp. butter
1/2 tsp vanilla


Beat eggs at high speed for 5 minutes. Gradually beat in sugar, ginger, lemon juice, cinnamon, baking powder, salt, nutmeg and flour. Stir in pumpkin. Spread in 15x10x1 pan and top with chopped nuts. Bake at 375 for 10 min. Turn out on dish towel that has been dusted with powdered sugar. Roll cake and towel together and cool. Unroll and spread filling and reroll.
