Breakfast Crockpot Casserole by


12 eggs
1 (32oz) bag frozen O'Brien hashbrowns
1 lb cooked and cut up bacon, ham or sausage
1/2 cup diced onion
3/4 lb shredded cheddar cheese
1 cup milk
1 cup sour cream
1/2 tsp dry mustard
salt & pepper and other seasonings to taste


Spray 6 qt crock pot with nonstick spray.

Put 1/2 of the hashbrowns, meat, and onion mixture. Sprinkle on half the cheese. Repeat.

Mix together eggs, milk, sour cream and seasonings. Pour this mixture over the top of ingredients in crock pot.

Cook on low for 8 hours.
