Chunky Chicken Soup by

Ingredients

3/4 lb chicken breasts, cut into 1/2 inch cubes
1/2 cup chopped onion
1 1/2 tsp minced garlic
2 tbsp. flour
2 cans broth (29 oz)
2 cans great northern beans, rinsed and drained
1 1/2 cups frozen mixed vegetables, thawed
1 cup frozen chopped broccoli, thawed
1 can (4oz) chopped green chilies
3/4 tsp Italian seasoning
1/2 tsp ground cumin
1/4 tsp pepper
1/2 cup mozz cheese

Instructions

In a Dutch oven, sauté the chicken and garlic in oil until chicken is no longer pink. Stir in flour until blended; gradually add broth. Bring to a boil; cook and stir for 2 minutes

Reduce heat; stir in the beans, vegetables and seasonings. Cook, stirring occasionally, for 8-10 minutes or until vegetables are tender. Garnish with cheese.
