Mexican Rice Casserole by

Ingredients

2 cups minute rice or 3 cups cooked regular rice (can use brown rice)
3 8-10 oz cans of chili
3 8-10 oz can tamales
1 16 oz shredded cheese
Optional Japaleno peppers

Instructions

Place rice in 9x13 (spray with pam) cover cheese, put layer of tamales, then chili (layer of japaleno peppers if used) and top with cheese. Bake 30 minutes or until cheese is melted and lightly browned at 350 degrees.
