Dark Chocolate Creme Brule by


2 c whipping cream
2 c half/half
8oz semi sweet chocolate, finely chopped or shredded
8 large egg yolks
1/3 c + 8T sugar


Preheat oven to 300. Bring cream and half/half to boil in large saucepan. Reduce to low heat. Add chocolate and whisk until blended and smooth. Remove from heat. Whisk yolks and 1/3 c sugar in large bowl to blend. Gradually whisk in chocolate mixture. Strain if necessary.

Divide among 8 custard cups. Place cups in large baking pan. Add enough water to come up 1/2 way on cups. Bake until set, about 50 min. Remove from water; cool. Chill 2 hrs. Cover and refrigerate overnight.

Preheat broiler. Sprinkle each custard with 1 T sugar. Broil until sugar is golden brown, about 3 min. Refrigerate another 1-2 hrs.
