Mushroom Cheese Souffle (Dad) by

Ingredients
2 eggs, separated
2 T mild chili's (optional)
2 T flour
s&p to taste
1 c cottage cheese (small curd)
2 T diced green onion
3-4 oz thinly sliced fresh mushrooms

Instructions
Heat oven to 300.  Grease a 1 qt casserole dish.  Beat egg whites until light and foamy and set aside.  In a separate mixing bowl, beat eggs yolks until light and lemony and set aside.  Whisk milk gradually into flour; add to egg yolks and beat well.  Add s&p and cottage cheese.  Beat until well blended.  Gently fold in chili's, onion, mushrooms and egg whites.  Turn into prepared casserole and bake 50 minutes until golden brown.
