1 1/3 cups all purpose flour

1/2 cup granulated sugar
3/4 creamy peanut butter if allergic use 3/4 wow or sun butter
1 large egg
1 1/2 tsp vanilla extract

preheat oven to 350 f
in a medium mixing bowl mix whisk together the flour, baking soda, baking powder , and salt and set aside
in the bowl of an electric mixer with the paddle attachment cream together butter, sugar, and brown sugar until combined
mix in the peanut butter, egg, and vanilla
scoop out the dough and shape into balls and place 2 inches apart
slightly flatten the balls with a fork
bake cookies one sheet at a time for 9 minutes
cool 5 minutes on pan, then cool on a rack
consume in 2 days
