banana-coconut "cream pie" smoothie by

Ingredients

3 ripe bananas
1 1/2 cups unsweetened canned coconut milk, chilled(do not use coconut cream)
1 1/2 cups pineapple juice, chilled
2 tablespoons sugar
1/2 teaspoon vanilla
1/8 teaspoon ground nutmeg
3 ice cubes
toasted shredded sweetened coconut (optional)

Instructions

1. peel bananas and break into chunks. place in blender. add coconut milk, pineapple juice,sugar,vanilla,nutmeg and ice cubes
2. blend mixture about 30 seconds to 1 minute or until frothy and ice cubes are finely ground. pour into 4 glasses. garnish with toasted coconut.
NOTE: if desired, combine ingredients in large pitcher and puree using an immersion blender
