Ingredients
2 tablespoons olive oil, plus more to coat baking dish
250g Coles Brand large pasta shells
1 medium brown onion, cut into medium dice
2 medium celery stalks, thinly sliced
1/4 teaspoon Coles Brand ground nutmeg
1/4 teaspoon Coles Brand dried chilli flakes
2 tablespoons Coles Brand red wine vinegar
3 tablespoons plain flour
2 cups full-cream milk
1 cup water
2 x 185g cans Coles Brand tuna chunks in springwater, water reserved
3 cups loosely packed fresh baby spinach leaves (75g)
1 cup Coles Brand Australian parmesan cheese shredded
1/3 cup Coles Smart Buy dried breadcrumbs

Instructions
Step 1
Position the rack in the centre of the oven and preheat the oven to 180C or 160C fan-forced. Lightly coat a 33cm x 22cm x 5cm baking dish with oil.
Step 2
Bring a large saucepan of salted water to a boil over high heat. Add the shells and cook, stirring often to ensure they don’t stick together, for 8 mins, or until tender but still firm to the bite. Drain.
Step 3
Meanwhile, heat a large heavy-based saucepan over medium heat. Add the 2 tablespoons of oil and heat for 1 min. Add the onion and celery and cook for 5 mins, or until they soften. Stir in the nutmeg and pepper flakes. Add the vinegar and cook, stirring, for about 30 secs, or until it has nearly evaporated.
Step 4
Slowly stir in the flour and cook, stirring constantly, for about 1 min, or until it coats the vegetables. Slowly add the milk and water while whisking constantly so no lumps form. Season the sauce to taste with salt and pepper and bring to a simmer over medium-high heat. Reduce the heat to medium-low and simmer very gently for 10 mins, or until the sauce thickens slightly.
Step 5
Remove pan from heat, and stir the tuna and its juices into the sauce. Stir in the pasta, spinach, and 1/2 cup of the parmesan. Season to taste with salt and pepper. Transfer the mixture to the prepared baking dish.
Step 6
In a small bowl, mix together the breadcrumbs and remaining 1/2 cup parmesan. Sprinkle over the pasta mixture.
Step 7
Bake for 25 mins, or until bubbly all over and very pale golden on top. Stand at room temperature for 5 mins before serving.
