Marzipan (no cooking) by

Ingredients

250 gms Cashewnuts
250 gms icing sugar

Almond essence (few drops)

Sugar syrup (sugar dissolved in water)

Instructions

1.Take equal parts of cashew nuts and icing sugar . For eg if you are taking 250 gms of cashew nuts , then take 250 gms of icing sugar .
2. Grind the cashews to a fine powder , if they become a little pasty , no worries, continue grinding until it's nice and smooth , make sure it's not grainy
3 . Now mix the icing sugar with the ground cashew nuts along with few drops of almond essence ( do not add a lot as it will be too overwhelming , I added about 5 to 6 drops , for 250 gms of cashews and icing sugar each )and make a dough using sugar syrup , adding little at a time (dissolve about 1 tablespoon of sugar in quarter cup of water , wait till it cools )
4. Divide the dough according to the food colours you need to add by making a well in the centre and adding about 3 to 4 drops of colour .
5. The dough will start leaving oil, do not do anything about it , as it will dry up later , once your dough is ready , make small balls and shape them using the moulds , which are readily available at any store which sells baking stuff .
6. Once done, keep it overnight to dry , before you store it in air tight container .
