Pineapple Upside Down Cake - Quick and Easy in your Bean Pot by

Ingredients

1 cake mix (mixed per package instructions
1 can of crushed pineapple
1 stick of margarine
¾ cup of brown sugar
10 maraschino cherries.

Instructions

Melt 1 stick of butter in bottom of bean pot.
Mix in about 3/4 cup of brown sugar with the melted butter.
Place crushed pineapple (I have also done pineapple rings) on top of this mixture, then place about 10 maraschino cherries on top of the pineapple.
Prepare the cake mix per package instructions.
Pour the cake mix on top of the pineapple/brown sugar/butter mixture. Place the lid on the bean pot and cook for about 12 minutes in the microwave. Check at 10 but depending on the bean pot and the thickness of the mix it could be 10 to 13 minutes. Remove lid and serve with vanilla ice cream. So yummy
