Ingredients
360g all-purpose flour
200g granulated sugar
2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
4 large eggs, room temperature
200g olive oil
1/2 teaspoon vanilla extract
240g apples, finely chopped

Instructions
Preheat oven to 350. Line 2 greased 8X4in. loaf pans with parchment; grease paper.
Mix dry ingredients in one bowl.
Mix wet ingredients in another bowl.
Add dry to wet, fold in apples, mix lightly.
Bake 50-55 minutes. Cool for 10 minutes before depanning.
