Barbecue Beef Cups by
My kids loved these when they were little. Our adult son still requests them on occasion when he visits.
1 lb Browned hamburger (drained)
1/2 cup BBQ sauce
1 beaten egg
1 cup grated cheddar cheese
(2) small cans of refrigerated buttermilk biscuits (the small ones work the best but large ones can be cut down)

grated cheddar cheese
Stir all ingredients together using about 1/2 of the shredded cheese.
Press biscuits into bottom and sides of greased muffin tins. Add beef mixture to each tin and sprinkle remaining shredded cheese on top. Bake 8-12 minutes until golden brown.
Can top with sour cream, chopped tomatoes, green onions, or any other garnish. They are good all on their own though.
